Saag Gosht (Lamb with Spinach Sauce)
Recipe
Healthy, divine mutton dish without gravy.
What you need
Mutton: 11/4 kg, Leg cut into 4 cm pieces
Mustard seeds: 2 teaspoons
Garlic: 8 flakes, chopped
Onions: 2 medium-size, chopped
Ginger: 10 gms, chopped
Green Chillies: 5, finely chopped
Turmeric Powder: 11/2 teaspoon
Coriander Powder: 1 tablespoon
Red Chilli Powder: 2 tablespoons
Salt: 4 teaspoons
Curd: 1/2 cup, beaten
Spinach: 12 cups, finely chopped
Water: 1/4 cup
Oil: 1/2 cup
You can also add 1 teaspoon of sugar.
Method
1. Heat oil in a cooker.
2. Add mustard seeds. When they crackle, add garlic and meat. Stir fry til meat is browned.
3. Add onions, ginger, green chillies, turmeric powder, chilli powder, coriander powder, salt, curd, and water. Fry well for 3 minutes.
4. Add spinach and mix well.
5. Add water, close cooker, and bring to full pressure. Reduce heat and cook for 12 minutes.
6. Remove cooker from heat and allow to cool.
7. Open the cooker, place it on high heat, and cook for 10 minutes till all the water dries up, stirring occasionally.
