Mutton Korma Recipe

What you need

½ lb mutton

2 onions

1 cup curd (plain yoghurt)

1 teaspoon salt

½ lime

¼ coconut

3 teaspoons khus khus (poppy seeds)

½ small bunch coriander leaves

1 ½ tablespoons coriander seed

6 cloves

1" stick cinnamon

1" piece ginger

6 pods garlic

3 green chillies

4 tablespoons pure ghee (clarified butter)

Mutton Korma Preparation Method

1. Soak meat in curd and salt for at least an hour. 
2. Slice the 2 onions thin. 
3. Cook mixture over low fire till curd is nearly absorbed. 
4. Grind remaining masala (ingredients) to paste. 
5. Add masala paste to the mutton and cook for 5 minutes. 
6. Add pure ghee and cook till meat is tender and reddish brown. 
7. Add juice of lime before serving. 
8. Brown sliced onions in oil to garnish.

Note: There is another way to prepare korma. Brown onions, add ground masala and fry. Then add meat and curd and cook till tender. Fried and sliced almonds, raisins, and saffron may be added to make korma more rich in taste.
